Spaghetti Squash Jambalaya

I haven’t really wanted to cook since getting to Texas over a year ago. I have kind of been content eating steamer bags of frozen veggies or a quick green bell pepper taco. It was just one of those seasons where work became overwhelming and my creative side and passion for cooking got pushed to the back. I realized I needed to get back in the game when

I wasn’t even able to come up with something other than a protein shake and carrots for lunch. So I wrote down a list of foods I wanted to eat, pulled out the cookbooks, and got to thinking!

One food that was at the top of my list was spaghetti squash. It is incredibly easy to make and so comforting when you pair it with a usually hearty recipe. I was looking through a local Louisiana recipe book given to me by a friend and thought maybe I could recreate an always tasty jambalaya using spaghetti squash instead of rice.

Y’all, let me tell you that it was so good! The recipe below made enough for 2 weeks worth of food, so I froze the other half and had it a few weeks later when I knew I had a busy week of work. Even thawed out it was AMAZING! It gave me the warm comfort food I was looking for without being heavy at all!

Recipe: 

2 medium spaghetti squash, cooked and scooped out

1 link of sausage

1 package of chicken, cooked and shredded (I did mine in the crock pot the day before I cooked this)

1/2 yellow onion, chopped

1 green bell pepper, chopped

1 red bell pepper, chopped

15 oz can of tomato sauce

2 cloves of garlic, minced

1 tsp oregano

1 tsp thyme

1/2 tsp ground cayenne

1/2 tsp ground black pepper

1tsp kosher salt

Olive oil for sauteing

  1. Slice the sausage in half length wise and then in slices so they make small pieces. Add with olive oil, onions, peppers, garlic, and chicken to a large pot. Cook until onions are tender.
  2. Add in the spices and stir.
  3. Slowly add in the spaghetti squash while mixing to ensure it is evenly distributed.
  4. Pour in the tomato sauce over the mixture and continue stirring until mixed.
  5. Cook until warm. Then serve.
